  • 1 cup Chunky Salsa Substitute with your favorite spicy salsa for heat.
For the Sauce and Tortillas
  • 1 can Red Enchilada Sauce Green enchilada sauce can also be used.
  • 8 inch Tortillas Use flour for soft bite or corn for a traditional feel.
For the Cheese
  • 8 ounces Thick Cut Shredded Four Cheese Mexican Any preferred cheese blend works well too.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, brown the ground beef for 5-7 minutes, then drain excess grease and mix in the chunky salsa.
  3. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  4. Fill tortillas with the beef mixture, roll tightly, and lay in the baking dish.
  5. Pour remaining enchilada sauce over the rolled enchiladas, then sprinkle with shredded cheese.
  6. Cover with aluminum foil and bake for 25-30 minutes.
  7. Remove foil and broil for an additional 5-10 minutes until cheese is golden and bubbly.
