Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
  3. Steam or blanch the broccoli florets for 2-3 minutes until slightly tender, then finely chop.
  4. In a large mixing bowl, combine chopped broccoli, breadcrumbs, shredded cheddar cheese, Parmesan cheese, egg, garlic powder, and a sprinkle of salt and pepper. Stir until well-blended.
  5. Scoop portions of the mixture and roll them into balls, about the size of a golf ball, spacing them an inch apart on the baking sheet.
  6. Spray or brush the tops of the balls with olive oil before baking. Bake for 18-20 minutes until crispy and golden brown.
  7. Remove from the oven, allow to cool slightly, and serve warm with dipping sauces.
