- Preheat your oven to 275°F (135°C) and line a large baking sheet with aluminum foil.
- Remove the thin membrane from the back of the baby back ribs and trim any excess fat.
- Pat the ribs dry and brush with olive or avocado oil, then sprinkle seasoning mixture over both sides.
- Place the ribs, meaty side up, on the baking sheet, cover with foil, and bake for 2 hours.
- While the ribs bake, blend ketchup, apple cider vinegar, Worcestershire sauce, brown sugar, chipotle peppers, smoked paprika, and garlic powder in a blender.
- Increase the oven temperature to 325°F (160°C). Brush ¼ cup of BBQ sauce over the ribs and bake uncovered for an additional 15 minutes.
- Broil for 3-4 minutes for caramelization, watching closely to prevent burning.
- Let the ribs rest for a few minutes before serving with remaining BBQ sauce.
