  • 1 tablespoon Oil Olive oil or coconut oil for sautéing.

Method
 

Preparation Steps
  1. Begin by cutting the boneless, skinless chicken breasts into bite-sized pieces. Season with salt and pepper and set aside.
  2. Heat a tablespoon of oil in a large skillet over medium heat and add the seasoned chicken pieces. Sauté for 5-7 minutes until golden brown and cooked through.
  3. In the same skillet, add more oil if needed and sauté broccoli, bell pepper, and carrot for 3-5 minutes until tender yet crisp.
  4. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and soy sauce until smooth and creamy.
  5. Return the sautéed chicken to the skillet, add the sauce, and stir to coat. Heat for an additional 2-3 minutes.
  6. Prepare serving bowls with cooked rice as the base.
  7. Spoon the chicken and vegetable mixture over the rice in each bowl.
  8. Top each bowl with sliced green onions and sesame seeds before serving.
  9. Serve immediately while hot and enjoy!
