Ingredients
  

For the Salmon Bites
  • 1 pound Fresh Salmon skinless, firm pieces
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
  • 1 cup Panko Breadcrumbs
  • 2 tablespoons Olive Oil or cooking spray
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/4 cup Sweet Chili Sauce
  • 1 tablespoon Sriracha adjust based on heat tolerance
  • 1 tablespoon Honey optional
  • 1 tablespoon Lime Juice or lemon juice
For the Bowl Assembly
  • 2 cups Cooked Jasmine Rice or cauliflower rice
  • 1 cup Purple Cabbage shredded
  • 1 medium Avocado sliced
  • 1 cup Carrots shredded or julienned
  • 2 tablespoons Green Onions chopped
  • 1/4 cup Fresh Cilantro optional
  • 2 tablespoons Sesame Seeds optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or your air fryer to 390°F (200°C).
  2. Cut fresh salmon into bite-sized cubes, then toss with garlic powder, smoked paprika, salt, and black pepper.
  3. Press salmon cubes into panko breadcrumbs until thoroughly coated, then spray lightly with olive oil.
  4. Place salmon bites on a baking sheet or air fryer basket and cook for 10-12 minutes until crispy and golden.
Sauce and Assembly
  1. Whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey in a bowl until smooth.
  2. Assemble bowls starting with jasmine rice, then layer with purple cabbage, avocado, carrots, and crispy salmon bites.
  3. Drizzle with Bang Bang sauce and garnish with green onions, sesame seeds, and cilantro before serving.
