  • ½ teaspoon ground black pepper Use white pepper for a milder flavor.
For the Wrappers
  • 8-12 pieces spring roll wrappers Use wheat-based wrappers.
  • 1 tablespoon cornstarch mixed with water For sealing wrappers.
For the Finishing Touch
  • 2-3 tablespoons oil Avocado or olive oil are excellent options.

Method
 

Step-by-Step Instructions
  1. Heat vegetable oil in a pan over medium heat and add napa cabbage, bean sprouts, carrots, and mushrooms. Stir-fry for 2-3 minutes.
  2. Mix in green onion, sugar, salt, and pepper. Stir in cornstarch slurry and cook for 1-2 minutes until thickened. Remove from heat and let cool.
  3. Lay wrapper in diamond shape, brush a corner with slurry, fill with cooled mixture, roll tightly, and seal with slurry.
  4. Preheat air fryer to 400°F (200°C) for 3 minutes.
  5. Brush each roll with oil and arrange in a single layer in the air fryer basket.
  6. Air fry at 400°F for 12-15 minutes, flipping halfway through until golden brown and crispy.
