Ingredients
  

For the Noodles
  • 200 grams Chow Mein Egg Noodles thin, fresh noodles labeled as Hong Kong style
For the Vegetables
  • 1 medium Yellow Onion thinly sliced
  • 3 stalks Green Onions white parts sautéed, green tops for garnish
  • 100 grams Bean Sprouts fresh
For the Sauce
  • 2 tablespoons Dark Soy Sauce
  • 1 tablespoon Regular Soy Sauce
  • 1 tablespoon Oyster Sauce or vegetarian oyster sauce
  • 1 teaspoon Fish Sauce optional
  • 1 teaspoon Granulated Sugar or brown sugar
  • 2 tablespoons Water
For Cooking
  • 2 tablespoons Corn Oil or other neutral oil
  • 1 teaspoon Sesame Oil use sparingly

Method
 

Step-by-Step Instructions
  1. Soak the chow mein egg noodles in boiling water for 30 seconds to 1 minute until softened. Drain and set aside.
  2. In a mixing bowl, combine dark soy sauce, regular soy sauce, oyster sauce, optional fish sauce, granulated sugar, and water. Stir until sugar dissolves.
  3. Heat 1 tablespoon of corn oil in a wok. Sauté yellow onion and white parts of green onions for about 1 minute until fragrant.
  4. In the same wok, add another tablespoon of corn oil. Spread soaked noodles and cook for about 2 minutes until crispy. Flip and fry for an additional 2 minutes.
  5. Add sautéed onions, green onion tops, bean sprouts, and sauce to noodles. Toss and cook for 1 to 2 minutes until bean sprouts are slightly wilted.
  6. Remove from heat, drizzle with sesame oil, and toss gently. Serve immediately.
