  • 4 fillets Cod fresh or frozen, providing mild flavor
  • 1 cup Almond flour gluten-free coating

For the Cooking
  • 2 tbsp Extra virgin olive oil can substitute ghee or avocado oil
  • 1 tbsp Grapeseed oil prevent smoke during high-heat cooking
For the Sauce
  • 1 cup Chicken stock can substitute vegetable stock
  • 1 tbsp Lemon juice fresh juice is best
  • 2 tbsp Capers essential for traditional piccata taste
For Garnishing
  • 1 tbsp Fresh parsley or basil for different flavor

Preparation Steps
  1. In a shallow bowl, combine almond flour and salt. Rinse cod fillets under cold water and pat dry. Dredge each cod fillet in the almond flour mixture.
  2. Heat olive oil and grapeseed oil in a large skillet over medium-high heat until shimmering.
  3. Place coated cod fillets in the skillet and cook for 2-3 minutes on each side until golden brown.
  4. In the same skillet, reduce heat to medium and add chicken stock, lemon juice, and capers. Simmer for about 5 minutes until reduced by half.
  5. Stir in remaining grapeseed oil and return cooked cod to skillet, spooning sauce over fish. Cook for an additional minute to warm.
  6. Plate the Cod Piccata garnished with fresh parsley and enjoy!
