- In a mixing bowl or resealable bag, combine soy sauce, sriracha, minced garlic, grated ginger, toasted sesame oil, red chili flakes, salt, and pepper. Stir or shake until fully blended.
- Add the chicken thighs to the marinade, ensuring they are evenly coated. Seal the bag or cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours.
- Preheat your grill to medium heat (375-400°F) about 15 minutes before grilling.
- Mince green onions for garnish and toast sesame seeds in a skillet over medium heat for 2-3 minutes until golden.
- Carefully place the marinated chicken thighs on the grill and grill for 10-12 minutes, flipping every 2-3 minutes.
- During the last 2 minutes of grilling, brush the chicken thighs with Japanese BBQ sauce.
- Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes. Serve garnished with sesame seeds and green onions.
