Preparation
- In a large mixing bowl, sift together all-purpose flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk together the eggs and granulated sugar until creamy. Incorporate the whole milk, canola oil, and vanilla extract.
- Gently mix the wet and dry ingredients until just combined, avoiding overmixing. Fold in the chocolate chips and set aside.
Ganache Preparation
- Place chopped chocolate in a heatproof bowl. Heat the heavy cream until just simmering.
- Pour the hot cream over the chocolate and let it sit for a minute before stirring until smooth. Set aside to cool slightly.
Cooking
- Preheat a skillet over medium heat and lightly grease it with butter or oil.
- Pour about 1/4 cup of batter onto the skillet and cook until bubbles form. Flip and cook until golden brown.
- Repeat until all batter is used.
Serving
- Stack the cooked pancakes on a plate and drizzle with warm chocolate ganache. Serve with fresh berries or whipped cream.
