Preparation Steps

  3. Spread the sweet potatoes on the baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
  4. In a skillet over medium heat, brown the ground beef for about 5-7 minutes, then drain excess fat.
  5. Add taco seasoning and a splash of water to the beef, allowing it to simmer for 2-3 minutes.
  6. Mix diced tomatoes, onions, cilantro, and jalapeño (if using) for pico de gallo and let sit.
  7. Assemble the bowl with roasted sweet potatoes, seasoned beef, pico de gallo, guacamole, and sour cream.
