Method
 

Step-by-Step Instructions
  1. Cream together butter and sugar until light and fluffy, about 3–4 minutes.
  2. Beat in egg and vanilla extract until well combined.
  3. Sift in flour and salt, then stir until the dough comes together.
  4. Divide the dough, roll out, chill for 1 hour.
  5. Preheat oven to 160°C (320°F). Cut out heart shapes and place them on a baking tray.
  6. Bake cookies for 8-10 minutes, until edges are lightly browned.
  7. Cool cookies on wire rack.
  8. Prepare raspberry cream by heating raspberries, straining, and reducing the juice.
  9. Whip double cream and icing sugar until soft peaks form, then fold in raspberry reduction.
  10. Spread raspberry cream on one cookie, top with another to assemble.
  11. Chill assembled cookies for 30 minutes.
  12. Melt chocolate, dip sandwiches, and decorate immediately.
