- Preheat your oven to 350°F (175°C) and butter the baking dish.
- Wash and peel the potatoes. Slice them into 1/8-inch rounds using a mandoline.
- Melt butter in a medium saucepan, sauté onion for 3-4 minutes, then add garlic and thyme.
- Sprinkle in flour, form a roux, whisk in milk, thicken, and then stir in Gruyere cheese and seasonings.
- Spread a thin layer of sauce in the baking dish, layer half of the potato slices, season, and pour half the sauce over them. Repeat this process.
- Top with remaining Gruyere cheese, cover with foil, and bake for 45-60 minutes. Remove foil for the last 15-20 minutes to brown the top.
- Remove from oven, let it rest for 10 minutes before serving.
