Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and butter the baking dish.
  2. Wash and peel the potatoes. Slice them into 1/8-inch rounds using a mandoline.
  3. Melt butter in a medium saucepan, sauté onion for 3-4 minutes, then add garlic and thyme.
  4. Sprinkle in flour, form a roux, whisk in milk, thicken, and then stir in Gruyere cheese and seasonings.
  5. Spread a thin layer of sauce in the baking dish, layer half of the potato slices, season, and pour half the sauce over them. Repeat this process.
  6. Top with remaining Gruyere cheese, cover with foil, and bake for 45-60 minutes. Remove foil for the last 15-20 minutes to brown the top.
  7. Remove from oven, let it rest for 10 minutes before serving.
