- In a large mixing bowl, combine the shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix until all ingredients are well blended and creamy.
- Take an egg roll wrapper and position it diagonally on a clean surface. Spoon about 2 tablespoons of the filling onto the bottom corner of the wrapper. Fold the corner over the filling, tuck in the sides, and carefully roll it up tightly, sealing the edge with a dab of beaten egg.
- In a deep skillet, pour in about 2 inches of vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C).
- Carefully place the assembled egg rolls into the hot oil in batches, avoiding overcrowding. Fry for about 3-4 minutes or until they are crisp and golden brown.
- Once the Voodoo Egg Rolls are finished frying, serve them warm on a platter.
