  • 2 large green plantains or slightly yellow
  • 6 cloves garlic freshly minced
  • 2 tablespoons olive oil or butter
  • 1 cup pork cracklings optional
For the Garlic Shrimp
  • 1 pound medium shrimp peeled and deveined
  • 1 teaspoon paprika optional
For Garnish
  • 1/4 cup fresh cilantro optional
  • 2 wedge lime for serving

Method
 

Preparation Steps
  1. Peel and cut the plantains into 1-2 inch pieces. Bring salted water to a boil and add the plantains. Cook for 10-15 minutes until tender. Drain and cool slightly before mashing.
  2. In a mortar and pestle, combine cooked plantains with minced garlic and olive oil. Fold in pork cracklings if using. Mash until fluffy and slightly chunky. Season with salt and pepper.
  3. In a skillet, heat butter or olive oil over medium heat. Sauté minced garlic until fragrant. Add shrimp, season with salt and pepper, and cook for 3-4 minutes per side until pink and opaque.
  4. Mold the mashed plantains into bowls or onto plates and create a well. Place sautéed shrimp on top and drizzle with pan juices.
  5. Garnish with fresh cilantro and serve with lime wedges. Enjoy immediately for the best experience!
