Step-by-Step Instructions
  1. Start by peeling and deveining 800 grams of fresh shrimp, rinse and pat dry.
  2. Using a large chopper or mallet, smash the shrimp meat into a paste-like consistency for about 3-5 minutes.
  3. In a mixing bowl, mix the shrimp paste with salt, sugar, Shaoxing wine, garlic powder, and ground white pepper.
  4. Gather the mixture and slam it against the bowl for about 10 times to develop texture.
  5. Incorporate corn starch into the shrimp mixture, kneading lightly until combined.
  6. Heat oil in a large frying pan, form patties, and gently fry about 4-5 cakes at a time.
  7. Fry the shrimp cakes for about 2 minutes per side until golden brown.
  8. Remove from oil, drain on paper towels, and serve warm with dipping sauces.
