Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a muffin tin by greasing it lightly or lining it with paper cups.
  2. In a mixing bowl, whisk together the whole wheat flour, all-purpose flour, granulated sugar, baking powder, baking soda, kosher salt, caraway seeds, and dried currants.
  3. In a separate bowl, beat together the egg, plain nonfat Greek yogurt, nonfat milk, and melted unsalted butter until smooth.
  4. Gently fold the wet mixture into the dry ingredients until no dry flour is visible.
  5. Fill the muffin tin cups about 2/3 full with batter and sprinkle with sparkling sugar, if desired.
  6. Bake for 15-18 minutes until golden-brown and a toothpick comes out clean.
