- Preheat your oven to 375ºF (190ºC).
- Generously butter four ramekins to prevent sticking. Crack two fresh eggs into each ramekin. Pour a splash of heavy cream over the eggs, then sprinkle with shredded cheese, salt, and pepper.
- In a large oven-safe dish, add about one inch of hot water to create a bain-marie. Carefully place the prepared ramekins in the water bath.
- Transfer the dish to the preheated oven and bake for 15-18 minutes, depending on your desired yolk texture. After the first 10 or 13 minutes, remove the lids from the ramekins to allow the tops to slightly brown.
- Remove the ramekins from the bain-marie and let them cool for a moment. Garnish with fresh herbs and serve immediately with toasted bread.
