Step-by-Step Instructions
  1. Preheat your oven to 375ºF (190ºC).
  2. Generously butter four ramekins to prevent sticking. Crack two fresh eggs into each ramekin. Pour a splash of heavy cream over the eggs, then sprinkle with shredded cheese, salt, and pepper.
  3. In a large oven-safe dish, add about one inch of hot water to create a bain-marie. Carefully place the prepared ramekins in the water bath.
  4. Transfer the dish to the preheated oven and bake for 15-18 minutes, depending on your desired yolk texture. After the first 10 or 13 minutes, remove the lids from the ramekins to allow the tops to slightly brown.
  5. Remove the ramekins from the bain-marie and let them cool for a moment. Garnish with fresh herbs and serve immediately with toasted bread.
