  • 2 teaspoons Instant Yeast If using active dry yeast, ensure it’s activated in warm liquid first.
  • 1 teaspoon Salt Kosher or sea salt is recommended.
  • 1.5 cups Warm Milk About 110°F is ideal.
  • 4 tablespoons Melted Butter Substitute with vegetable oil if needed.
For the Baking Soda Bath
  • 10 cups Water Needed for your boiling bath.
  • cup Baking Soda Crucial for chewy crust.
For the Finishing Touch
  • 1 large Egg Used for the egg wash.

Method
 

Step-by-Step Instructions
  1. In a stand mixer, combine 4 cups of all-purpose flour, 1 tablespoon of sugar, 2 teaspoons of instant yeast, and 1 teaspoon of salt. Slowly pour in 1 ½ cups of warm milk and 4 tablespoons of melted butter. Mix on medium speed for 4-5 minutes, until smooth and elastic.
  2. Cover the bowl with a clean kitchen towel and let it rise in a warm area for 30-60 minutes, until doubled in size.
  3. Preheat your oven to 450°F (232°C). Punch down the dough and divide it into 12 equal pieces. Roll each piece into ¾-inch thick ropes, then cut into 1-2 inch pieces.
  4. In a large pot, bring 10 cups of water to a rolling boil. Carefully add ⅔ cup of baking soda.
  5. Drop a few pretzel bites into the boiling water (about 5-6) and boil for 30 seconds, turning halfway through.
  6. Brush each boiled pretzel bite with an egg wash made from 1 beaten egg and sprinkle with coarse salt. Bake for 12-14 minutes until golden brown.
  7. Allow to cool slightly before serving. Enjoy warm with honey mustard dipping sauce.
