  • 1 cup Whole Wheat Panko Breadcrumbs or regular breadcrumbs

  • 2 tablespoons Extra-Virgin Olive Oil or avocado oil
  • 1 teaspoon Dried Oregano or fresh oregano
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Onion Powder or minced onion
  • 1 teaspoon Kosher Salt adjust to taste
  • 1/2 teaspoon Red Pepper Flakes or black pepper for milder flavor
  • 2 tablespoons Tomato Paste or omit
  • 1/4 cup Fresh Parsley or fresh basil
  • 1 cup Fresh Spinach or finely chopped kale

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and coat a 9x13 inch baking dish with nonstick spray.
  2. In a large mixing bowl, crack an egg and beat it. Then, add ground chicken, breadcrumbs, Parmesan cheese, olive oil, and oregano, followed by garlic powder, onion powder, salt, red pepper flakes, parsley, and spinach.
  3. Mix all the ingredients gently, being careful not to overwork the mixture.
  4. Shape the mixture into 12 equal meatballs and place them on the baking dish, spaced about 1 inch apart.
  5. In a small bowl, whisk together the remaining tablespoon of olive oil and tomato paste, then brush this mixture over each meatball.
  6. Bake the meatballs for 18-22 minutes until golden brown and cooked through to an internal temperature of 165°F (74°C).
  7. Remove from the oven and allow to rest for a few minutes before serving.
