- Preheat your oven to 425°F (220°C).

- Spread the seasoned potatoes onto a baking sheet. Roast in the oven for 25–30 minutes, flipping halfway through.
- In a skillet, cook your protein until browned. Stir in taco seasoning and ¼ cup of water, simmering for about 5 minutes.
- Remove roasted potatoes from the oven and assemble them into individual serving bowls. Top with shredded cheese.
- Add your choice of toppings including salsa, sliced green onions, and chopped cilantro.
- Finish with a dollop of sour cream or Greek yogurt and serve warm.
