  • 2 tablespoons soy sauce/tamari use tamari for gluten-free

Step-by-Step Instructions
  1. In a medium pot, bring 4 cups of vegetable broth to a gentle simmer over medium heat.
  2. Add 2 tablespoons of grated fresh ginger and 2 cloves of minced garlic to the simmering broth. Stir occasionally and let infuse for about 5 minutes.
  3. In a small bowl, combine 3 tablespoons of miso paste with a ladle of hot broth and whisk until smooth.
  4. Pour the dissolved miso mixture back into the pot, stirring gently to incorporate.
  5. Mix in 2 tablespoons of soy sauce or tamari, the juice of one fresh lemon, and 1 tablespoon of sesame oil.
  6. Let the broth simmer for an additional 5 to 10 minutes, occasionally stirring and tasting.
  7. Ladle the warm broth into bowls and garnish with chopped green onions and cilantro.
