Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, crumble the feta cheese and add dill, mint, and lemon zest. Mash until combined but still chunky.
  3. Lay out two sheets of phyllo pastry, brushing the top layer with olive oil, then cut into strips about 3 inches wide.
  4. Place a tablespoon of filling at one end of each phyllo strip, fold the sides, and roll tightly into a cylinder.
  5. Brush the tops of the rolls with more olive oil and bake for 18-20 minutes until golden brown.
  6. In a saucepan, combine honey, chili flakes, and a splash of lemon juice over low heat until warmed through.
  7. Drizzle the warm chili honey over the rolls before serving.
