- Preheat your oven to 400°F (200°C). In a large mixing bowl, combine cherry tomatoes, chopped garlic, stripped thyme leaves, olive oil, kosher salt, and freshly ground black pepper. Toss thoroughly and spread evenly on a baking sheet.
- Place the baking sheet in the preheated oven and roast for about 30 minutes, until the tomatoes are soft and slightly charred.
- While the tomatoes roast, cut each burrata ball in half and fill the center with pesto.
- Arrange the roasted tomatoes around the pesto-stuffed burrata on a serving plate. Drizzle with olive oil, and finish with flaky sea salt and basil leaves.
