Ingredients
  

For the Salad
  • 1 can Garbanzo Beans rinsed and drained
  • 1 can White Beans rinsed and drained
  • 1 cup Diced Turkey Breast omit for vegetarian version
  • ½ cup Diced Salami can replace with other cured meats or omit
  • 1 medium Green Bell Pepper or red/yellow bell pepper
  • 1 cup Cherry Tomatoes halved
  • ½ cup Sliced Pepperoncini or banana peppers
  • ¼ cup Diced Red Onion can use scallions or shallots
  • ¼ cup Chopped Parsley or basil/cilantro
  • ½ cup Provolone or Mozzarella Pearls can substitute with feta or dairy-free cheese
For the Dressing
  • ½ cup Plain Greek Yogurt or mayonnaise/dairy-free yogurt
  • 3 tablespoons Extra Virgin Olive Oil or light-tasting oil
  • 2 tablespoons Red Wine Vinegar or balsamic vinegar
  • 2 tablespoons Pepperoncini Brine
  • 1 tablespoon Dijon Mustard or yellow mustard
  • 1 clove Garlic finely grated
  • 1 teaspoon Dried Oregano or Italian seasoning
  • a pinch Red Pepper Flakes
  • a pinch Sea Salt

Method
 

Dressing Preparation
  1. In a small bowl, combine Greek yogurt, olive oil, red wine vinegar, and pepperoncini brine. Add Dijon mustard, grated garlic, dried oregano, red pepper flakes, and sea salt. Whisk until smooth. Set aside.
Salad Mixing
  1. In a large mixing bowl, add garbanzo beans, white beans, diced turkey breast, diced salami, diced green bell pepper, halved cherry tomatoes, sliced pepperoncini, diced red onion, chopped parsley, and provolone or mozzarella pearls. Toss gently to mix.
Dressing the Salad
  1. Pour the creamy dressing over the salad mixture and toss gently for 1-2 minutes until well combined.
Chilling and Serving
  1. Cover the salad and refrigerate for at least 30 minutes before serving to allow flavors to meld.
