Steps
  1. Clean the calamari and cut it into 1-2 inch rings. Pat them dry and set aside.
  2. In a cold skillet, combine olive oil and minced garlic. Heat on medium for about 1 minute until fragrant.
  3. Stir in red chili flakes and anchovies, mixing for 10-30 seconds to infuse the flavor.
  4. Add tomato paste and cook for 30 seconds, then toss in cherry tomatoes, olives, and capers. Cook for 1-2 minutes.
  5. Deglaze with white wine, scraping the bottom of the skillet. Simmer for 2-3 minutes.
  6. Stir in the calamari rings and cook for 1-3 minutes until opaque.
  7. Remove from heat and toss in lemon zest and parsley.
