  • 2 medium-sized Flour Tortillas or gluten-free tortillas
For the Cheese
  • 1 cup Shredded Cheese cheddar and Monterey Jack are favorites

Step‑by‑Step Instructions
  1. Begin by heating a drizzle of olive oil in a large, non-stick skillet over medium heat.
  2. Add diced bell peppers and onions to the hot skillet, stirring regularly for about 5-7 minutes.
  3. Stir in the shredded chicken, seasoning it with salt and pepper to taste.
  4. Reduce the heat slightly and place a flour tortilla into the skillet.
  5. Spoon a generous portion of the chicken mixture onto one half of the tortilla and sprinkle cheese on top.
  6. Cook the folded quesadilla for about 3-4 minutes on one side, then flip and cook for another 3-4 minutes.
  7. Once both sides are golden brown, remove the quesadilla from the skillet and let it rest.
  8. Slice it into wedges and serve warm with a side of salsa or avocado.
