- Combine 2 cups of shredded chicken, ½ cup of Greek yogurt, and 1 tablespoon of dried herbs in a medium bowl. Mix thoroughly and set aside.
- Take a low-carb tortilla and lay it flat. Spoon the chicken mixture onto one half, add ½ cup cheese on top, and fold the tortilla over.
- Heat the skillet over medium heat for about 1 minute, then place the quesadilla in the skillet. Cook for 3-4 minutes until golden.
- Flip the quesadilla and cook for another 3-4 minutes, checking for golden brown and melted cheese.
