  • 4 tablespoons Korean black bean paste (Chunjang/Jjajang) Essential for an authentic flavor
  • 1 tablespoon granulated sugar Balances the savory notes
  • 2 tablespoons oyster sauce Optional vegetarian substitute: mushroom sauce
  • 2 tablespoons soy sauce Low-sodium varieties recommended
  • 1 tablespoon chicken bouillon powder Vegetarian alternative: vegetable broth
  • 1 cup water For simmering sauce consistency
For the Noodles
  • 12 ounces fresh wheat noodles Dried noodles can also be used
For the Vegetables
  • 2 cups green cabbage Can substitute with napa or savoy cabbage
  • 1 large yellow onion Shallots can be used for a different flavor
  • 4 pieces scallions Separate white parts from green
  • 1 medium Persian cucumber Can replace with pickled radish
For the Thickening
  • 2 tablespoons potato starch Cornstarch is also a suitable alternative

  • 1 tablespoon ginger Optional for a milder taste
  • 1 tablespoon apple cider vinegar Lemon juice can be a substitute

Method
 

Step-by-Step Instructions
  1. Prepare the ingredients by chopping cabbage, dicing onion, and slicing scallions.
  2. Heat vegetable oil in a large pot or wok and sauté chopped cabbage and onion for 4 to 6 minutes until translucent.
  3. Add diced pork and ginger, cooking for 3 to 5 minutes until the pork is no longer pink.
  4. Stir-fry black bean paste in the center of the pot for 3 to 5 minutes until glossy.
  5. Mix in sugar, oyster sauce, soy sauce, and chicken bouillon, stirring for 1 to 2 minutes.
  6. Pour in water and simmer for 8 to 10 minutes until thickened.
  7. Combine potato starch with cold water and add to the sauce, cooking for 2 to 3 minutes until thickened.
  8. Cook noodles in boiling water for 4 to 7 minutes, drain, and rinse under cold water.
  9. Serve noodles with the black bean sauce, garnished with green scallion parts and cucumber.

Notes

Fry the black bean paste well, use fresh noodles for best texture, separate sauce and noodles until serving, don't rush the simmer for thickening, taste and adjust flavors before serving, and prep ingredients beforehand for efficiency.
