- Prepare the ingredients by chopping cabbage, dicing onion, and slicing scallions.
- Heat vegetable oil in a large pot or wok and sauté chopped cabbage and onion for 4 to 6 minutes until translucent.
- Add diced pork and ginger, cooking for 3 to 5 minutes until the pork is no longer pink.
- Stir-fry black bean paste in the center of the pot for 3 to 5 minutes until glossy.
- Mix in sugar, oyster sauce, soy sauce, and chicken bouillon, stirring for 1 to 2 minutes.
- Pour in water and simmer for 8 to 10 minutes until thickened.
- Combine potato starch with cold water and add to the sauce, cooking for 2 to 3 minutes until thickened.
- Cook noodles in boiling water for 4 to 7 minutes, drain, and rinse under cold water.
- Serve noodles with the black bean sauce, garnished with green scallion parts and cucumber.
