Step-by-Step Instructions
  1. Preheat the oven to 180°C (356°F).
  2. Heat olive oil in a cast-iron skillet over medium heat. Add diced onion and minced garlic; sauté for 3-5 minutes until soft and fragrant.
  3. Introduce the gnocchi to the skillet and cook for 3-5 minutes until slightly golden.
  4. Pour in white wine (or vegetable stock) to deglaze the pan. Let it simmer for a few minutes, then add cream and water or stock. Simmer gently for 5 minutes.
  5. Stir in baby spinach and artichokes, allowing spinach to wilt. Fold in basil pesto.
  6. Sprinkle gouda cheese on top and transfer to the oven. Bake for 15-20 minutes until cheese is melted and golden.
