- Preheat your oven to 400ºF and prepare your sheet pan with parchment paper.
- Toss fresh broccoli florets with minced garlic and 2 tablespoons of olive oil; season with salt and pepper. Spread in a single layer and roast for 10 minutes.
- Slice chicken sausage into thin rounds and place in a bowl.
- Increase oven temperature to 450ºF. Add roasted broccoli to the bowl with sausage, then toss in frozen tortellini, red pepper flakes, and remaining olive oil. Mix thoroughly.
- Sprinkle half a cup of grated Parmesan cheese over the mixture and stir to combine.
- Drizzle olive oil on the prepared sheet pan, pour the mixture on it, and spread evenly.
- Bake for 12-15 minutes, checking for crispy edges.
- Remove from the oven, sprinkle with remaining Parmesan cheese and optional garnishes before serving.
