Ingredients
  

For the Chicken
  • 1 pound Chicken Breasts can be substituted with chicken thighs
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Cayenne Pepper adjust to taste
  • 1 teaspoon Kosher Salt adjust to taste
  • 2 tablespoons Olive Oil
  • 1 whole Lemon fresh slices for roasting
For the Slaw
  • 1 cup Plain Yogurt or non-dairy alternative
  • 1/4 cup Dill chopped
  • 1/4 cup Parsley chopped
  • 1/4 cup Chives chopped
  • 2 tablespoons Lemon Juice
  • 2 cups Green Cabbage shredded
For Assembly
  • 4 pieces Pitas warm them for best experience
  • 1 whole Avocado slice before serving

Method
 

Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Combine chicken breasts with brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, kosher salt, and olive oil in a large mixing bowl. Toss until coated and add lemon slices.
  3. Spread the chicken mixture onto the sheet pan and roast for about 15 minutes. Toss the chicken and roast for an additional 4-7 minutes until golden.
  4. To make the slaw, whisk together plain yogurt, dill, parsley, chives, lemon juice, olive oil, and a pinch of salt in a separate bowl. Fold in the green cabbage.
  5. Warm the pitas in the microwave or oven for 2-3 minutes.
  6. Assemble the pitas with a generous portion of slaw, followed by the roasted chicken and avocado slices.
  7. Serve immediately while warm.
