Preparation Steps
  1. Preheat your workspace. Slice 12 medjool dates lengthwise to remove the pits and lay flat on a parchment-lined baking sheet.
  2. Gently press down on each date until they flatten slightly, aiming for about 1/4-inch thick.
  3. Spread an even layer of unsweetened peanut butter over each smashed date using a small spatula or butter knife.
  4. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  5. Drizzle the melted chocolate over each peanut butter-topped date.
  6. Chill the baking sheet in the refrigerator or freezer for about 30 minutes until the chocolate has firmed up.
  7. Once set, sprinkle a pinch of flaky sea salt over each date and serve.
