  • 1 cup Sourdough Starter Ensure it's active
  • 2 cups All-Purpose Flour Can be replaced with bread flour
  • 1 cup Bread Flour
  • 1 cup Water Use filtered water
  • 1 tablespoon Soft Brown Sugar Granulated sugar can be a substitute
  • 1 teaspoon Salt Essential for flavor
  • 1 tablespoon Baking Soda For poaching bath
For Topping
  • 1 tablespoon Coarse Salt Flaky sea salt can be used

Method
 

Steps
  1. Feed the starter about 6 hours before making the pretzels.
  2. In a large bowl, combine the sourdough starter, all-purpose flour, water, brown sugar, and salt.
  3. Transfer the shaggy dough onto a floured surface and knead for about 10 minutes.
  4. Place the kneaded dough in a lightly oiled bowl and let it rise for 4 to 5 hours.
  5. Cover and refrigerate the dough overnight.
  6. After chilling, rest the dough for about 30 minutes and shape into pretzels.
  7. Let the shaped pretzels rest for about 1 hour at room temperature.
  8. Preheat a pot of water with baking soda to a gentle boil and poach each pretzel for 30 seconds.
  9. Bake at 425°F (220°C) for 15-20 minutes or until deep golden brown.
