  • 2 tablespoons Parsley Cilantro can be swapped for a different flavor.
Eggs
  • 4 large Eggs Medium or large eggs work best for texture.
  • 1 pinch Black Pepper Freshly cracked adds the best flavor.
Optional
  • 1 teaspoon Smoked Paprika Optional but recommended for extra flavor.

Cooking Steps
  1. Prepare the garlic paste by combining garlic, sea salt, and parsley in a mortar. Pound until smooth and gradually stir in olive oil until sauce-like.
  2. In a nonstick frying pan, heat olive oil over medium heat for 2-3 minutes until shimmering.
  3. Thinly slice remaining garlic and add to hot oil. Stir for 2-3 minutes until golden brown.
  4. Crack the eggs into small bowls then gently add to the pan, cooking for about 2 minutes until whites set and yolks are runny.
  5. Baste the eggs by spooning garlic oil over them for another minute until whites are fully cooked.
  6. Remove eggs using a slotted spatula and arrange on a serving plate.
  7. Season with black pepper and sea salt, then drizzle garlic sauce over the eggs. Serve immediately.
