Method
 

Step-by-Step Instructions
  1. Slice the scallions into thin rings and soak in ice water for 10 minutes.
  2. Heat oil to 350°F (175°C). Add wonton wrappers in batches, frying until golden and crispy.
  3. Combine chopped salmon or ahi tuna with soy sauce and half the soaked scallions.
  4. In a small bowl, whisk together mayonnaise, rice vinegar, and wasabi paste until smooth.
  5. Layer wontons, sushi rice, seafood mixture, avocado, cucumbers, jalapeños, sriracha mayo, and barbecue sauce.
