Ingredients

  • 3 medium Lemons zested and juiced
  • 3 large Eggs use room temperature
  • 2 cups All-Purpose Flour can swap with gluten-free flour blend
  • 1 tbsp Baking Powder essential for leavening
  • 1/2 tsp Baking Soda works best with acids
  • 1/2 tsp Salt enhances flavor
  • 1/2 cup Greek Yogurt can substitute with sour cream
  • 1/4 cup Milk any dairy or non-dairy milk
  • 1/4 cup Water used in simple syrup
For the Glaze
  • 1 cup Powdered Sugar for glazing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan.
  2. Combine granulated sugar with lemon zest in a bowl, then set aside.
  3. Cream together softened butter and vegetable oil with the lemon-sugar mixture until light and fluffy.
  4. Add eggs one at a time, then mix in lemon juice, vanilla extract, and lemon extract until well combined.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, alternating with yogurt and milk, mixing just until combined.
  6. Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 50 to 55 minutes until golden brown and a toothpick comes out clean.
  8. Prepare simple syrup with equal parts lemon juice and water, brushing it on the loaf after it cools for 10 minutes.
  9. Once cooled, mix powdered sugar with lemon juice to make the glaze and drizzle it over the loaf.
