  • 2 tablespoons Granulated Sugar or coconut sugar
  • 1 teaspoon Ground Cinnamon or nutmeg
  • 2 tablespoons Unsalted Butter or coconut oil
Cheesecake Filling
  • 8 ounces Cream Cheese or dairy-free alternative
  • 1/2 cup Powdered Sugar or maple syrup
  • 1 teaspoon Vanilla Extract or vanilla bean paste
  • 1 cup Heavy Whipping Cream or coconut whipped cream
Strawberry Topping
  • 2 cups Fresh or Frozen Strawberries or other fruits
  • 1 tablespoon Lemon Juice or lime juice

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Brush both sides of the tortillas with melted butter, sprinkle with sugar and cinnamon, shape over oven racks, then bake for 8-10 minutes until golden.
  3. Beat together cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream and fold it into the mixture. Chill in refrigerator.
  4. Cook strawberries, lemon juice, and sugar in a saucepan until juicy. Mix cornstarch with cold water, add to the pan, and cook until thickened.
  5. Fill cooled taco shells with cheesecake filling and top with strawberry sauce before serving.
