Step-by-Step Instructions
  1. In a large bowl, combine fresh lime juice, avocado oil, chili powder, ground cumin, garlic powder, salt, and pepper. Add the chicken thighs and marinate for 15 to 30 minutes.
  2. Heat a skillet over medium-high heat. Add the marinated chicken thighs, cooking for 8 to 10 minutes per side until cooked through and golden brown. Slice after resting.
  3. In a medium bowl, mix sweet corn, red onion, sour cream, mayonnaise, Cotija cheese, chili powder, salt, pepper, and lime juice to create the street corn mix.
  4. Warm your cooked rice. If using a microwave, cover and heat for 1-2 minutes.
  5. Assemble bowls by layering warm rice, sliced chicken, and topping with the street corn mix. Garnish with Cotija cheese, cilantro, and lime wedges.
