Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine sweet chili sauce, soy sauce, minced garlic, grated ginger, and lime juice. Add the chicken, coat well, and marinate for at least 30 minutes.
  2. Preheat a grill pan over medium-high heat. Grill chicken for 5-6 minutes per side until caramelized and cooked through. Allow to rest for 5 minutes before slicing.
  3. In a small saucepan, combine coconut milk, honey, and lime juice. Simmer over low heat for 5-7 minutes until slightly thickened.
  4. Prepare jasmine rice according to package instructions until tender. Fluff with a fork once cooked.
  5. Assemble bowls with jasmine rice as the base, topped with sliced chicken, drizzled with coconut lime sauce, and garnished with cilantro, lime wedges, and chili flakes.
