Preparation Steps
- In a large mixing bowl, combine yogurt, oil, lemon juice, grated ginger, minced garlic, and all the spices until smooth and well-blended.
- Take your chicken pieces and score deep slashes into the flesh, then coat generously with the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 12 hours, ideally up to 24 hours.
- Preheat your oven to 200°C (400°F). Line a baking tray with aluminum foil and place a greased wire rack on top.
- Bake the marinated chicken in a single layer for 30 minutes, then turn and continue baking for 10-15 minutes until internal temperature reaches 75°C (165°F).
- Remove from the oven and let it rest for 5-10 minutes before garnishing with cilantro and serving with lemon wedges.
