Ingredients
  

For the Marinade
  • 2 cups Greek yogurt for a thicker texture
  • 2 tablespoons oil can substitute avocado or melted ghee
  • 2 tablespoons lemon juice lime juice can be a great alternative
  • 1 tablespoon grated ginger fresh ginger is best
  • 4 cloves minced garlic fresh garlic preferred
For the Spices
  • 2 teaspoons garam masala adjust based on spice preference
  • 1 teaspoon paprika use sweet paprika for milder taste
  • 1 teaspoon turmeric essential for authentic Tandoori flavor
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt enhances flavors
For the Garnish
  • 1/4 cup fresh cilantro chopped
  • 2 pieces lemon wedges for serving

Method
 

Preparation Steps
  1. In a large mixing bowl, combine yogurt, oil, lemon juice, grated ginger, minced garlic, and all the spices until smooth and well-blended.
  2. Take your chicken pieces and score deep slashes into the flesh, then coat generously with the marinade.
  3. Cover the bowl with plastic wrap and refrigerate for at least 12 hours, ideally up to 24 hours.
  4. Preheat your oven to 200°C (400°F). Line a baking tray with aluminum foil and place a greased wire rack on top.
  5. Bake the marinated chicken in a single layer for 30 minutes, then turn and continue baking for 10-15 minutes until internal temperature reaches 75°C (165°F).
  6. Remove from the oven and let it rest for 5-10 minutes before garnishing with cilantro and serving with lemon wedges.
