  • 1 cup Unsalted Butter remember to use cold butter cut into cubes for the best results
  • 2 tablespoons Coarse Sugar (optional) use regular sugar if coarse is unavailable

Method
 

  1. Preheat your oven to 350°F (175°C) and line an 8 x 8-inch baking pan with parchment paper.
  2. In a food processor, combine 2 cups of flour, 1/2 cup of sugar, and a pinch of salt. Add 1 teaspoon of vanilla and 1/2 teaspoon of almond extract. Pulse to blend until combined.
  3. With the processor running, add in 1 cup of cold, cubed unsalted butter. Pulse until the mixture resembles coarse crumbs, about 20-30 seconds.
  4. Transfer the dough into the prepared pan and press it down evenly to form a smooth layer.
  5. Sprinkle a couple of tablespoons of coarse sugar over the top of the pressed dough for a crunchy finish.
  6. Bake for 35 to 40 minutes, until the top turns golden brown. Let the aroma fill your kitchen.
  7. Remove from the oven and let it cool completely on a wire rack before cutting into squares.
