- Preheat your oven to 350°F (175°C) and line an 8 x 8-inch baking pan with parchment paper.
- In a food processor, combine 2 cups of flour, 1/2 cup of sugar, and a pinch of salt. Add 1 teaspoon of vanilla and 1/2 teaspoon of almond extract. Pulse to blend until combined.
- With the processor running, add in 1 cup of cold, cubed unsalted butter. Pulse until the mixture resembles coarse crumbs, about 20-30 seconds.
- Transfer the dough into the prepared pan and press it down evenly to form a smooth layer.
- Sprinkle a couple of tablespoons of coarse sugar over the top of the pressed dough for a crunchy finish.
- Bake for 35 to 40 minutes, until the top turns golden brown. Let the aroma fill your kitchen.
- Remove from the oven and let it cool completely on a wire rack before cutting into squares.
