- Preheat your oven to 375°F (190°C) and spread 1 cup of marinara sauce evenly in a 9x13 inch baking dish.
- Boil salted water in a large pot, then cook the jumbo pasta shells for 8-10 minutes until al dente, then drain and cool under cold water.
- In a mixing bowl, combine ricotta, 2 cups of mozzarella, parsley, salt, and pepper. Mix until creamy.
- Fill each cooked shell with about 1 heaping tablespoon of the filling and place in the baking dish with filling facing up.
- Pour the remaining marinara sauce over the stuffed shells and sprinkle with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 30 minutes, then uncover and bake for another 10-15 minutes until cheese is bubbly and golden.
