  • 30 pieces Jumbo Pasta Shells
For the Filling
  • 15 ounces Ricotta Cheese substitute with cottage cheese for a lighter version
  • 2 cups Shredded Mozzarella Cheese reserve some for topping
  • 0.5 cups Fresh Parsley or basil if preferred
  • 1 teaspoon Kosher Salt or sea salt if preferred
  • 0.5 teaspoon Ground Black Pepper or white pepper for subtlety
For the Sauce
  • 3 cups Marinara Sauce use homemade or store-bought
For the Topping
  • 0.5 cups Parmesan Cheese or Pecorino Romano nutritional yeast as a dairy-free alternative

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and spread 1 cup of marinara sauce evenly in a 9x13 inch baking dish.
  2. Boil salted water in a large pot, then cook the jumbo pasta shells for 8-10 minutes until al dente, then drain and cool under cold water.
  3. In a mixing bowl, combine ricotta, 2 cups of mozzarella, parsley, salt, and pepper. Mix until creamy.
  4. Fill each cooked shell with about 1 heaping tablespoon of the filling and place in the baking dish with filling facing up.
  5. Pour the remaining marinara sauce over the stuffed shells and sprinkle with remaining mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 30 minutes, then uncover and bake for another 10-15 minutes until cheese is bubbly and golden.
