- Begin by preheating your oven to 375°F (190°C). In a skillet over medium heat, sauté one cup of diced bell peppers and half a cup of diced onions until soft and fragrant, about 5-7 minutes.
- Take a pre-baked pie crust and lay it in a 9-inch pie dish. Spread one cup of diced ham over the bottom of the crust, followed by half of your shredded cheese.
- In a large mixing bowl, crack six large eggs and whisk with one cup of heavy cream until combined and slightly frothy.
- Stir the cooled sautéed bell peppers and onions into your egg mixture. Pour this over the ham and cheese in the pie crust.
- Sprinkle the remaining cheese generously over the top of the quiche.
- Place the quiche in the oven and bake for 30-35 minutes until the edges are set and the top is golden brown.
- Remove the quiche from the oven and let it cool for about 20 minutes on a wire rack before serving.
