  • 2 tablespoons maple syrup or brown sugar can substitute with coconut sugar
  • 2 tablespoons coconut aminos or soy sauce tamari can be used for gluten-free option
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes optional for heat
  • 1 tablespoon arrowroot powder or cornstarch arrowroot is preferable for gluten-free
Filling
  • 1 tablespoon olive oil for sautéing
  • 1 pound ground beef can substitute with ground pork or chicken
  • 2 cloves garlic minced
  • 2 teaspoons fresh ginger grated
  • 1 medium red bell pepper finely diced
  • 1/2 cup shredded carrots
  • 4 whole green onions sliced
  • kosher salt & ground pepper to taste
  • sesame seeds for garnish
  • 1 head Boston Bibb lettuce for wraps
  • rice optional for heartier meal

Method
 

Make the Sauce
  1. In a small mixing bowl, whisk together maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and red pepper flakes until smooth. Gradually stir in the arrowroot powder to combine all ingredients thoroughly.
Cook Beef
  1. Heat a large skillet over medium-high heat and drizzle in olive oil until it shimmers. Add the ground beef, breaking it up with a spoon as it cooks. Brown the beef for about 5 minutes, stirring occasionally.
Add Aromatics
  1. Stir in the minced garlic and freshly grated ginger. Sauté for 1-2 minutes until fragrant.
Incorporate Veggies
  1. Add the finely diced red bell pepper and shredded carrots to the skillet. Sauté for about 3-4 minutes until tender.
Combine Sauce and Finish
  1. Pour the sauce over the beef and vegetables. Stir well and simmer for 2-3 minutes until the sauce thickens.
Assemble Wraps
  1. Prepare the lettuce leaves and spoon the filling into each leaf. Garnish with sesame seeds if desired.
