Ingredients
  

For the Ceviche
  • 1 pound Fresh Sea Scallops Ensure they are very fresh or properly frozen.
  • 2 tablespoons Lemon juice Freshly squeezed.
  • 1 tablespoon Orange Zest Can be substituted with tangerine.
  • 1 tablespoon Orange juice
  • 2 tablespoons Lime juice Freshly squeezed.
  • 1 tablespoon Ruby Red Grapefruit juice Freshly squeezed.
  • 1 clove Garlic Crushed.
  • 1 pepper Jalapeño Seeded and thinly sliced.
For the Crunch
  • 1 cup Radishes Thinly sliced.
  • 1 small Red Onion Diced or thinly sliced.
  • 1 cup Red Bell Pepper Small diced.
For the Garnish
  • 1/4 cup Fresh Cilantro Chopped.
  • Salt & Pepper To taste.

Method
 

Preparation Steps
  1. Start by rinsing the fresh sea scallops under cold water to remove any sand or debris. Using a sharp knife, gently remove the small muscle from the side of each scallop, then slice them in half lengthwise.
  2. In a mixing bowl, combine the freshly squeezed lemon, lime, orange juice, and ruby red grapefruit juice. Add the corresponding zest to this mixture for an extra burst of flavor.
  3. To the citrus marinade, introduce crushed garlic, thinly sliced jalapeño, and crunchy radishes for texture. Then, fold in diced red onion and red bell pepper. Season with salt and pepper to taste.
  4. Carefully add the prepared scallops to the bowl with the marinade and vegetables. Using a spatula, gently toss the scallops until they are completely coated.
  5. Cover the bowl tightly and place it in the refrigerator. Allow the scallops to marinate for at least four hours.
  6. Once marinated, give the ceviche a gentle stir and taste to adjust seasoning. Before serving, sprinkle freshly chopped cilantro over the top.
